2021 Le Secret des Vignes Pouilly Fumé - La Bibliothèque - Val de Loire 100% Sauvignon Blanc 0.75 Ltr. Blanc
picture of

Bright color with fine yellow reflections. Subtle nose with delicate hints of flint, smoke, citrus fruits, green apple and acacia flowers. Nice and tight and lively in the mouth where its mineral character blossoms nicely. Wonderfully refreshing and full of finesse, it turns into a long, balanced and dry finish. Still one of the most noble expressions of Sauvignon!

The name 'La Bibliothèque' is a nod from Donatien Bahuaud to his passion for books and literature in general. Traditionally, he is more than happy with a local crottin de Chavignol (goat cheese) but of course also with salads, grilled prawns and a tasty lamb curry.

climate

Pouilly Fumé and Sancerre have a sunny but fairly cool climate, which allows the grapes to ripen slowly and optimally and to display an extraordinary 'fraîcheur'. Precipitation falls throughout the year.

soil

The vineyards are located in the north of the appellation and consist largely of a limestone soil with a small piece of silex. This guarantees rich wines that excel in finesse. The term 'Fumé' therefore has nothing to do with the flint or flint as is sometimes claimed, but refers to the local name of this grape, 'Fumé blanc'.

vinification

Rigorous selection from the best plots of the northern vineyards of the appellation. After the cold fermentation, it rests on its lees for 4 months, with regular bâtonnage to enhance its flavour. Then the wine is bottled and rests for another 5 months to harmonize perfectly.
