Pale color with light yellow nuances. The first aromas contain hints of mint and ripe notes of lemon and grapefruit. In the mouth it immediately gives fresh flavors that vary from mint-lemon to mint-strawberry. In the end it gives slightly more mature notes such as pear and candied lemon.

Le Secret des Vignes is a series of monovarieties that are a general representation of the different terroirs in the Loire. They are an introduction to the domain and are happy to be tasted with various dishes and flavours. Delicious with shells, seafood, fine fish preparations and of course with goat cheese.

climate

It is slightly warmer here and with more hours of sunshine than in the westernmost part of the Loire. It lies on the transition from maritime climate to continental climate with less cooling from the ocean.

soil

Several vineyards mainly composed of sand are located in the valley of the Cher around the appellation of Chinon. They have been specially selected because they can harvest a little earlier here. The grapes here remain slightly smaller and show a better ratio between acids and sugars.

vinification

After harvesting, the grapes partially enjoy a short maceration (3-4 hours) on the skins. It gives the wine a little more character and depth while still keeping its lively and nervous character. The fermentation is done at a low temperature to preserve the finer and fresher aromas. After a few months resting on stainless steel, it is bottled.
